Under the reaction condition of 50℃ and pH3.5, 1g solid enzyme powder (or 1mL liquid enzyme) decomposed pectin for 1h to produce 1mg galacturonic acid is defined as 1 unit of enzyme activity, expressed as U/g (U/mL).
